Does anyone happen to know how long a Betta can survive out of the water? I have my tanks covered and I cover during water changes, so I don't anticipate any escapes. I am just curious.

I imagine they can survive as long as they don't dry up.

We had one hop down the sink and lie in the open-air part of the garbage disposal catcher for a good 15-20 min before the plumber could get there to open up the sink, and when we plopped her in the water, I was amazed that she looked none the worse for wear (other than the stress stripes that seemed permanently etched on her sides).
My guess is as long as they're still hydrated, they can keep going, though the stress coat takes a beating.

Rhyn - that must have been quite the exciting experience! I am glad your Betta came thru it ok.
