Well, I was feeding the boys a bit ago and as usual they jumped...Bubba doing his little jump out of the water before I dropped the food in and Simon, well, Simon jumped right out of the tank and landed on the floor (they're both on the top of the entertainment center). This isn't the first time Simon's done that. A few days ago he jumped out and landed on top of the entertainment center. Anyway, I scooped him up (sure am glad the cats weren't near) and put him back in. He looked a bit dazed, but ate the rest of his food. I had him chasing the butt of an un-lit cigarette a few minutes ago (he chases it, tries to bite it and flares at it). I don't think he's hurt, but I'd like to know what to look for if he is.
There was a show on not too long ago (maybe a few months ago since I saw it before I got Bubba) that had a woman with an 'amazing jumping fish' (I think it was Ripley's Believe It Or Not...not sure since I just saw the commercial for it). It looked like she'd drop the food and the betta would jump up and grab the food out of the air (the tank was on the floor and she was standing above it). I think I'm going to have to move Simon to the kitchen counter when I feed him now.

If I were you I would figure out a way to just barely lift off their cover to get their food in. Maybe use an eyedropper to sneak the food in. I wouldn't give them the opportunity to be able to jump out of the tank. You're just asking for a sick or seriously hurt betta.
I'd watch your guy for signs of fin rot or fungus.
