I searched using "vacation" as the criteria and did not find any matches, so I will ask...
How long can I Betta safely go without being fed?

I have left him alone for two days / one night. But will have my neighbor feed if more than 3 days. That is what I did in August when I was gone for two weeks. The last time I had an aquarium, when I was about 13 we used to drop in those "feeding pucks" that were good for a week.

Having a neighbor feed the fish is the best compared to the other options =)

AND the best way to keep the fish from being overfed by your neighbor is to use one of those 7 day pill holders and put each day's food in...that way you can still control the amount of food they get, and the variety and you don't run the risk of them being overfed.
For being gone over a week, i would also suggest cutting your feedings down to every 2-3 days instead of daily, in the long run it will help your tank get thru 2 weeks without a water change.

Another vacation question As you all may know, turkey day is coming up. I am currently at college and we cannot stay here for the holiday. I'm going home next wednesday night and coming back sunday. That's four/five days without food or light. Is this ok?

I was gone for 5 days. I left Saturday morning and fed him last at 8am. He was fed again on Monday (4 blood worms) at 8am by my uncle. I assumed he ate them as I did not see any worms in the tank. When I got home on Wednesday he ate again around 9:30pm.
When I got home it was dark in the room where I left him. I had the light on a timer for 8hrs a day. When I looked in the tank and saw him tucked under the plant, I thought he had died. There was no motion and his face was all faded. Within a few minutes he moved a little. It took about 15 minuted for him to start swimming around. I tried feeding him, but he kept missing the food. I swear he was blind. He was bumping into the filter and the heater and did not see me or the food. It took him about 30 minutes before he ate and his color was all back. He seemed happy as before the trip.
The poor guy must of been depressed and thought he was abandoned as he only had about 5 minutes interaction from Saturday to Wednesday night.

There was no motion and his face was all faded. Within a few minutes he moved a little. This is what happens when fish are sleeping and it's nothing to worry about. It just takes them a few minutes to perk back up to their normal self again. Glad to hear everything went well while you were gone!
