I'll be going away for vacation for 6 days. From what I've read elsewhere, my fish should be ok without food, although if anyone can confirm that it would be helpful. My question relates to whether I should leave the light on the entire time I am away. Currently, the light is the only heat source and generally keeps the tank around 75 degrees (it's a 1 gallon tank and there aren't really any good heater options). So from that perspective I think it is a good idea. But I know the constant bright light probably wouldn't be great for him. I now have the light on when I am awake and turn it off at night. The other issue with having the light on is that if the room is dark, it causes him to see his reflection and he flares like mad.
Anyway, light on or light off?

Can you take the fish and tank with you?
The situation you're proposing won't kill the fish, but it isn't ideal either:
1. unregulated temperature 2. fish need a light/dark cycle 3. 6 days without food is doable, but isn't desirable either 4. going 6 days without a water change on a 1 gallon tank is about the most you'd want to go

I know the situation isn't ideal and no, I can't have someone come watch him while I am away, nor can I take him with me (I wish!). So that being the case, would you recommend I leave the light on or off?

go to your local target, walmart or home depot like stores and get a timer. Set it to an 8 hour cycle, plug the light cord into it, turn it on and it will turn it on for the time you set.

I was about to recommend the same thing! Timers are great for when you're away from home, and are the perfect solution, so that the light can stay on and off.

So I went with the timer and I am now back and all is well. He seemed extremely lethargic when I got back and it wasn't looking good there for a few minutes, but in no time he was back to his old self. Thanks everyone!
